Blueberry Kefir Mousse
- 2 tsp. glucomannan (or konjac powder or xanthan gum)
- 2 tsp. honey
- 1 cup plain kefir
- ? tsp. nutmeg (optional)
- 1 cup frozen blueberries
- ½ tsp. lemon zest
- In blender, combine all ingredients on high speed until thick, about 2 minutes. Let sit an additional 2 minutes in the fridge to thicken more, if desired.
- Depending on the thickness of your kefir, you may need more glucomannan.
- If you don’t have glucomannan or xanthan gum, which are both prebiotic fibers to nourish the good bacteria introduced in the kefir, you can leave it out for a simple smoothie. You may wish to add more liquid such as almond milk or more kefir.
- Exchange the honey for maple syrup or any other sweetener and adjust to taste.
- For alternate versions, try raspberries instead of blueberries, or replace lemon with orange.
