Many people are surprised to find that pine trees actually produce an edible nut that's not only tasty, but nutritious as well. In fact, pine nuts have been widely consumed since prehistoric times, and have enjoyed extensive culinary use in many different cultures. As with most nuts, pine nuts are a good source of protein, thiamin (vitamin B1) and magnesium.

Simple Spinach Pesto
Made with wholesome ingredients in a matter of minutes, pesto is one of those foods that offers a big bang for the buck. It lends so much flavor, enhances so many foods and is so healthy that it would be wise for everyone to keep a batch in the fridge for quick use. This simple recipe incorporates spinach instead of basil with garlic, pine nuts, lemon and freshly grated parmesan cheese. Toss it with pasta, spread it on sandwiches, use it to top steak, burgers and grilled chicken, or serve it as a dip with chips and veggies. The possibilities are practically endless and eternally tasty.
Simple Spinach Pesto
- 3 cups spinach
- 1/2 cup olive oil (divided)
- 1/3 cup pine nuts
- 1/4 cup freshly grated parmesan cheese
- 2 garlic cloves
- 1/2 tsp. sea salt
- Pinch pepper
- Juice of 1/2 lemon
- Pinch red chili pepper flakes (optional)
- In food processor, combine all ingredients using only ¼ cup olive oil. Blend on low setting while slowly adding remaining ¼ cup olive oil.
- Once combined, taste and adjust seasoning.
- Refrigerate until use.
