Festive Cranberry Bread (Gluten-Free)
Make a special place on your table for this wholesome and festive cranberry bread. It’s moist and hearty, with a welcoming combination of tartness from fresh cranberries, sweetness from oranges and warm nuttiness if you add walnuts or pecans. The addition of orange and lemon zest takes it to next-level wonderful! This bright loaf with tangy-sweet flavors and chewy-crunchy textures is destined to be a family favorite year after year.
Festive Cranberry Bread (Gluten-Free)
- 2 cups Bob’s Red Mill Paleo Flour
- 2 Tbsp. Nutiva Chia Seeds
- 1 Tbsp. Bob’s Red Mill Flax Meal
- 1 cup Nutiva Coconut Sugar
- 1-½ tsp. Bob’s Red Mill Baking Soda
- 1 tsp. Redmond Real Salt
- 2 Tbsp. vegan butter
- 2 Tbsp. SunButter Sunflower Seed Butter
- 1 Tbsp. Nutiva Buttery Coconut Oil
- 3/4 cup orange juice
- 1 tsp. orange zest
- 1 tsp. lemon juice
- 1 tsp. lemon zest
- 1 egg
- 1 cup fresh or frozen cranberries (coarsely chopped)
Optional: 1/2 cup finely chopped walnuts or pecans
- Preheat oven to 350° F. Lightly oil 9x5-inch loaf pan.
- In large bowl, whisk together all dry ingredients.
- Cut in butter until mixture resembles coarse cornmeal.
- In separate bowl, combine orange juice, orange zest, lemon juice, lemon zest, SunButter and egg.
- Pour wet mixture into dry ingredients, mixing just enough to dampen.
- Fold in nuts and cranberries.
- Spoon mixture into loaf pan.
- Bake for 55 minutes. A knife or toothpick inserted in center should come out clean.
- Cool bread in pan for 15 minutes and then turn out onto a wire rack to cool completely.
The naturally occurring chlorophyll in the sunflower seed butter may give a slight green tint to the bread. This is totally natural!
