Chocolate Chip Berry-Walnut Cookies
What’s better than a warm cookie right out of the oven? A warm BLUE cookie right out of the oven! And what’s even better about these ones is that they’re made with a few sweet, out-of-the-ordinary ingredients to help offset the amount of sugar typically found in
cookie recipes.
Naturally colored with blackberries, blueberries and pure
butterfly pea powder, they’re fun to eat, dunk and share – and kids love ‘em, too! Plus, they’re gluten-free, vegan-friendly and rich in a variety of
superfoods.
Chocolate Chip Berry-Walnut Cookies
- 100 g frozen blackberries (thawed)
- 60 g blueberries
- 1 cup plant-based butter
- 1 cup white cane sugar
- 1 prepared flax egg*
- 1 tsp. cornstarch
- 3/4 tsp. baking soda
- Few pinches maldon or flaky salt
- 1 cups raw walnuts
- 1 cup semi-sweet or dark chocolate chunks
- 1 tsp. Suncore Foods Blue Butterfly Pea Supercolor Powder
- 2 ½ cups gluten-free baking flour
- 1 tsp. psyllium husk
- 1 Tbsp. vanilla extract
- In small blender, combine thawed blackberries, blueberries and vanilla extract until slightly smooth. Set aside.
- In bowl, combine gluten-free flour, cornstarch, baking soda and blue butterfly pea powder.
- In separate bowl or stand mixer, incorporate sugar and butter until smooth. Add prepared flax egg, berry mixture and psyllium husk and mix well. Stir in flour mixture until dough-like consistency forms.
- Fold in chocolate chunks and walnuts.
- Refrigerate for about 20-30 minutes. (This will make the dough a little firmer and easier to work with.) Note: If you prefer not to wait, you can simply spoon drop the dough onto a parchment-lined cookie tray and bake.
- Remove dough from refrigerator and preheat oven to 405 degrees F. Use hands to form dough into 3-oz. balls. Arrange on parchment-lined baking sheet. Use fork to firmly press down each dough ball. Sprinkle each dough ball with salt. Return to refrigerator until oven is fully preheated.
- Bake until cookie tops are golden brown and slightly cracked, about 8-10 minutes.
- Cool for at least 15 minutes before serving.
- *To prepare flax egg, mix 1 tablespoon flax meal with 3 tablespoons water. Set aside for 5 minutes or until consistency becomes gelatinous.
