Pamela's Products Biscuit and Scone Mix Gluten Free Description
Enjoy biscuits and scones anytime you want them! With two simple ingredients added to for this mix, you can make delicious sweet or savory biscuits, and tender scones for breakfast, lunch or dinner. Serve them with everything from butter and honey, to gravy. No eggs needed!
Directions
Country Biscuits
1 bag Pamela's Biscuit Mix
12 TBSP butter or butter alternative, cut in ½" pieces/well chilled
1 cup milk, soy, rice, or almond milk (add 2 tsp lemon juice or apple cider vinegar to milk for a tang addition)
Yield: 9 large or 12 medium biscuits
Place rack in top third of oven and pre-heat oven to 400F. Using a stand mixer with paddle attachment or pastry blender, cut butter into dry mix until pea-sized crumbs are formed. Add milk and mix until just incorporated. Scoop onto a piece of greased parchment or plastic wrap and gently form into a rectangle or circle. Using a second piece of greased wrap on top, gently pat or roll to 1" to 1½" high. Dough will be soft. Use dental floss to cut dough into 9 or 12 pieces, biscuit cutter dipped each time in rice flour, or greased knife to cut out biscuits and transfer to greased or parchment covered cookie sheet. Bake for 20 to 25 minutes until just starting to brown and biscuit tops are splitting open. Biscuits are fragile when hot. Serve with butter and/or honey.

One-Skillet Chicken & Garlic-Lime Broccolini
When time is scarce and motivation is short, there’s one important kitchen utensil that can help you put together a mouthwatering meal in just a few minutes. Armed with just a skillet, you can cook up juicy chicken breasts (sprinkled with a secret dusting of gluten-free biscuit mix to seal in the flavor) and a heaping helping of healthy broccolini. One pan, two hungry mouths: dinner is done!
One-Skillet Chicken & Garlic-Lime Broccolini
Ingredients
2 organic chicken breasts, pounded thin
¼ cup gluten free biscuit mix
Salt and pepper, to taste
¼ cup organic olive oil
2 cloves garlic, crushed
8 ounces broccolini
Juice of half lime
Directions
- Place chicken In resealable plastic bag and pound to 1/2” thickness.
- Remove chicken from bag and add biscuit mix; toss to evenly coat chicken. Sprinkle with salt and pepper on each side.
- In frying pan or cast iron skillet over medium heat, warm olive oil. Add chicken and cook 5 minutes on each side until golden brown.
- Add crushed garlic and broccolini to pan; reduce heat to medium-low, cover and cook for an additional five minutes.
- Squeeze half of a fresh lime over broccolini only.
