This is 85% Cacao but it is surprisingly mild - much smoother and lighter than you might expect. We use very light cocoa beans and instead of adding emulsifiers like soy lecithin we use the extra cocoa butter which adds to the richness and smooth texture.

Keto Chia Chocolate Ice Cream
Using real, whole-food ingredients creates a dreamy, creamy ice cream better than anything pulled hurriedly from the freezer section of the supermarket. And making your own ice cream is not as complicated as you think. This keto-friendly, non-dairy recipe takes 30 minutes to prep and cook using nutrient-rich chia milk, dark chocolate and eggs for a custard-like consistency – no ice cream maker required!
Keto Chia Chocolate Ice Cream
- 2 cups Seeds of Wellness Chia Non-Dairy Beverage Unsweetened Original
- 1 bar (2.82 oz.) 85% cocoa dark chocolate
- 3 Tbsp. allulose sweetener
- 4 egg yolks
- Pinch salt
- In sauce pan on medium-low heat, heat chia milk 4-5 minutes until simmering. Stir to avoid scalding. Remove from heat.
- In mixing bowl, beat egg yolks with fork, then slowly add ¼ cup hot chia milk, beating until yolks are warm.
- Strain egg/milk mixture into chia milk in sauce pan. Return to low heat; stir constantly 5-10 minutes until thickened slightly. Remove from heat.
- Add sweetener, pinch of salt and chocolate; stir until chocolate is melted and fully incorporated. Let cool, then transfer to freezer-safe bowl and place in freezer.
- When edges are frozen (about an hour), remove from freezer. Using electric mixer, beat mixture.
- Return to freezer until frozen through, about 4 hours.
- Let rest 10 minutes at room temperature prior to serving.
