PB2 Powdered Peanut Butter is peanut butter re-imagined! Freshly roasted peanuts are pressed to remove most of the oil. Add a little sugar and a dash of salt for flavor and the result is peanut butter with only 1.5 g of fat per serving - almost 70% fewer calories than traditional peanut butter and 6 g of plant-based protein.
The subject of powdered peanut butter tends to create a lot of questions. One we hear frequently is, Why should I make the switch to powdered? Vegan Peanut Butter Cookies
- 3/4 cup peanut butter
- 1/4 cup almond milk
- 2 chia eggs
- 1/4 cup almond flour
- 1/4 cup peanut butter powder
- Pinch of sea salt
- 1 Tbsp. vanilla
- 1/4 cup pumpkin
- Pinch of stevia
- Preheat oven to 350 degrees F.
- In small bowl, make chia by combining 2 Tbsp. chia seeds and 5 Tbsp. water. Set aside.
- In medium mixing bowl, combine flour, sea salt and sweetener.
- In larger bowl, combine milk, vanilla, peanut butter, pumpkin and chia eggs.
- Combine dry and wet ingredients until dough is formed.
- On well-oiled baking sheet or parchment lined baking sheet, spoon cookies onto the pan, evenly spaced and press with fork.
- Bake 8 to 10 minutes.
- Remove from oven, and allow to cool.
