Sloppy Joe Casserole

Ground beef simmers with tomatoes, tender veggies and just enough chili warmth, then cozies up with pasta and a golden layer of melted cheese. It’s weeknight-friendly, crowd-pleasing and exactly the kind of meal that feels best served family-style, maybe with seconds already planned.

Sloppy Joe Casserole
- 1 lb. ground beef
- 1/2 medium onion (diced)
- 1/2 cup red pepper (diced)
- 1/2 cup carrot (peeled and diced)
- 1 tsp. salt
- 1 tsp. chili powder
- 1/2 tsp. garlic powder
- 26 oz. finely diced tomatoes
- 1 cup water
- 1 Tbsp. agave syrup
- 8 oz. pasta (regular or gluten-free)
- 2 cups shredded cheddar cheese (dairy or vegan)
- In medium pot over medium-high heat, cook meat with onion, pepper and carrot until meat is cooked through. Drain excess fat.
- To pot, add salt, chili powder and garlic powder and mix well with meat and veggies.
- Add water, tomatoes and agave syrup and stir to combine. Bring to boil, then add pasta. Simmer 10 minutes until pasta is al dente. Preheat oven to 400 degrees F.
- In 9 x 13-inch baking pan, add mixture, top evenly with shredded cheese and bake 10 minutes until cheese is melted and bubbly.
