Pecan-Crusted Chicken With Honey Mustard Sauce

Sprouted pecans add rich crunch and subtle sweetness, while a simple honey mustard sauce brings everything together with a tangy-sweet finish. Whether baked, pan-fried or air-fried, it’s a feel-good meal that hits the comfort-food note beautifully.

Pecan-Crusted Chicken With Honey Mustard Sauce
Chicken
- 4 organic chicken breasts
- 1/2 cup almond flour
- 1 cup Rich Nuts Sprouted Pecans-Maple (finely ground into "flour")
- 3/4 cup Rich Nuts Sprouted Pecans-Maple (coarsely chopped)
- 1 tsp. Redmond Real Salt
- 1/2 tsp. black pepper
- 1 tsp. smoked paprika
- 1/2 tsp. garlic powder
- 1 Tbsp. maple syrup (optional)
- 2 organic eggs
- 1 Tbsp. Primal Kitchen Organic Dijon Mustard
- Chopped fresh parsley (for garnish)
- Avocado oil (coconut oil or avocado oil spray)
Honey mustard sauce
- 1/4 cup Primal Kitchen Organic Dijon Mustard
- 3 Tbsp. raw honey
- 1 Tbsp. lemon juice
- 1 Tbsp. Primal Kitchen Avocado Oil Mayo (optional)
- Pinch sea salt
- On flat work surface, using meat mallet, pound chicken breasts between parchment until evenly thin. Set aside.
- In mixing bowl, combine finely ground pecan flour, coarsely chopped pecans, almond flour, salt, pepper, paprika and garlic powder. Stir in maple syrup, if using.
- In separate bowl, whisk together eggs and Dijon mustard.
- Dip chicken in egg wash, then press into pecan mixture until fully coated.
Sauce
- In small bowl, whisk together mustard, honey, lemon juice, mayo and salt.
Cooking methods
Bake (with avocado oil)
- Preheat oven to 400 degrees F. Brush or spray baking sheet with avocado oil.
- Place chicken on sheet; lightly oil the top. Bake 18-20 minutes.
Pan fry (with coconut oil)
- In skillet, heat coconut oil.
- Add chicken and cook 5-6 minutes per side.
Air fry (with avocado oil spray)
- Preheat air fryer to 375 degrees F. Spray basket with avocado oil.
- Air fry 10 minutes; flip; cook 6-8 minutes more.
To serve
- Plate chicken, garnish with chopped fresh parsley and sauce.
