Healthy Hearts: Air Fried Artichoke Hearts
These seed-crusted artichoke hearts crisp up in 10 minutes, with flavors of Dijon mustard, oregano and garlic. The “breading” is crafted with a clever blend of flax and hemp seeds, adding a boost of omegas and protein along with the gluten-free crunch. Serve these crave-worthy healthy hearts as a quick snack or easy appetizer dipped into tangy lemon-dill yogurt. Pro tip: You just might want to double the batch.
Healthy Hearts: Air Fried Artichoke Hearts
Artichoke Hearts
- 14 oz. can or jar artichoke hearts
- 1 Tbsp. Dijon mustard
- 1 Tbsp. unsweetened non-dairy milk
- ¼ cup hemp seeds
- ¼ cup ground flaxseed
- 1 tsp. oregano
- 1 tsp. garlic powder
- ¼ tsp. black pepper
- ¼ tsp. pink salt
Lemon-Dill Yogurt Dip
- 2 oz. unsweetened non-dairy yogurt
- ½ tsp. lemon juice
- 1 Tbsp. chopped fresh dill
- Preheat air fryer to 370 degrees F or your preheat oven to 400 degrees F and turn on fan. If using oven, prepare sheet pan with parchment paper.
- Drain artichoke hearts, pat dry with towel and cut into halves or quarters.
- In bowl, combine mustard and non-dairy milk.
- In another bowl, combine hemp seeds, ground flaxseed and all spices.
- Dip each artichoke heart first into mustard-milk mixture then into flax mixture to coat; arrange in air fryer basket or on sheet pan (Note: Do not crowd basket or pan to ensure crisping.)
- Bake in air fryer for 10 minutes, flipping halfway through, or in oven for 10 minutes (no need to flip).
- In small bowl, combine all yogurt dip ingredients.
