Directions

Prepare
For 1 lb. of pasta to 4 quarts water

Bring water to a rolling boil, add salt, add pasta to boiling water and stir. Cook uncovered and stir occasionally until desired tenderness is reached. Drain well, add sauces and serve.

Cooking time: 11-12 minutes.

Pair: This pasta shape is perfect for holding chunky meat sauces. Toss with Bolognese sauce and serve with thick slices of artisan bread for a savory Italian meal.

One-Pot Chicken Alfredo

In this recipe, everything comes together in a single skillet: the chicken browns, the pasta cooks and a flavorful, creamy coconut sauce ties it all together for a meal that’s tasty, comforting and convenient. One-Pot Chicken Alfredo in Skillet with Basil Leaves on Top

One-Pot Chicken Alfredo

  • 1-1/4 lbs. chicken thighs (boneless and skinless)
  • 1 Tbsp. olive oil
  • 2 cups water
  • 1 can (15 oz.) coconut cream
  • 1 garlic clove (crushed)
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. Italian seasoning
  • 12 oz. pasta (regular or gluten free)
  • 1/4 cup fresh basil (sliced)
  • 1/2 cup freshly grated parmesan cheese (or vegan parmesan cheese)
  1. In medium sauté pan, heat olive oil to medium heat. Add chicken and cook 10 minutes. (Note: Chicken does not have to be cooked through yet.)
  2. Add water, coconut cream, spices and pasta to pan. Bring to boil, cover and simmer for 10-15 minutes until pasta is cooked.
  3. Remove chicken from pan and cut into bite-sized pieces before returning to pan.
  4. Top with fresh basil and parmesan prior to serving.
