Mediterranean Chickpea Salad with Roasted Sweet Pepper Dressing
Salad
- 2 cans (30 oz.) chickpeas (drained, rinsed)
- 1 can (14 oz.) artichoke hearts (drained, chopped)
- 1 small sweet red pepper (medium dice)
- 2 cups mini cucumber (peeled, small dice)
- 1 cup grape tomato (cut in 1/2)
- 1/3 cup Kalamata olives (pitted, coarsely chopped)
Roasted sweet pepper dressing
- 2 roasted sweet red peppers (drained)
- 3 Tbsp. red wine vinegar
- 5 Tbsp. olive oil
- 1/2 tsp. garlic powder
- 1/2 tsp. sea salt
- Fresh ground pepper (to taste)
- Handful fresh parsley (basil and oregano leaves, or herbs of choice)
- Combine chickpeas, artichoke hearts, sweet pepper, cucumbers, grape tomatoes and kalamata olives in mixing bowl.
- In blender or blender jar, blend together roasted sweet peppers, red wine vinegar, olive oil, garlic powder, salt, pepper and fresh herbs until thoroughly combined and smooth.
- Pour dressing over chickpea mixture and toss to combine.
- Serve as is or on top of mixed salad greens.
