Gluten-Free Orange Muffins

Made with orange juice, orange zest and topped with a delicious orange glaze, these muffins offer a perfect blend of rich, citrus flavor and better-for-you ingredients.
Orange Muffins (Gluten-Free)
Dry ingredients
- 1 tsp. baking soda
- 3/4 cup sugar
- 1-1/3 cup gluten-free flour
Wet ingredients
- 1/4 cup butter
- 2 eggs
- 1/3 cup orange zest
- 1 cup coconut milk
- 1/2 cup orange juice
- 1/2 tsp. orange extract
Orange glaze
- 1 cup powdered sugar
- 2 Tbsp. orange juice
- In large bowl, add wet ingredients and whisk until well combined. Fold in orange zest until well combined.
- In medium bowl, combine dry ingredients.
- Add dry ingredients to wet ingredients and mix until batter is well combined.
- Using cookie scoop, fill each muffin cup evenly with batter.
- Preheat oven to 350 degrees F. and spray muffin pan with oil.
- Bake for 15 minutes or until toothpick comes out clean. Allow muffins to cool.
- In small bowl add orange glaze ingredients and mix until thick consistency forms.
- Spread orange glaze over muffins and sprinkle orange zest on top.
- Serve at room temperature and store in airtight container for 2-3 days.
