Brussels Sprouts Slaw With Pomegranate Dressing

Brussels Sprouts Slaw With Pomegranate Dressing
- 1 lb. Brussels sprouts (trimmed and shaved thinly)
- 1/2 bulb red cabbage (sliced thinly or grated)
- 1 cup pomegranate arils
- 1 Tbsp. Dijon mustard
- 5 Tbsp. pomegranate syrup
- 3 Tbsp. apple cider vinegar
- 6 Tbsp. olive oil
- 1 tsp. natural salt
- Generous amount fresh ground pepper
Optional Toppings
- Extra pomegranate arils for garnishing
- Sunflower seeds
- Crumbled feta cheese
- Using food processor, grater, mandoline or knife, shave Brussels sprouts and red cabbage into thin slices.
- Place Brussels sprouts, cabbage and pomegranate arils in mixing bowl. Toss to combine.
- In small bowl, whisk together Dijon mustard, pomegranate syrup, apple cider vinegar, olive oil, salt and pepper.
- Pour dressing over shaved vegetables and toss. Season generously with fresh ground pepper.
- Store salad in refrigerator until ready to serve.
- Serve as is or top with extra pomegranate arils and a drizzle of pomegranate syrup.
