Our Vanilla Protein Cupcake Mix makes mouth-watering cupcakes, each one providing 11g protein & just 110 calories. You read that right — 11g of protein from a cupcake, with a grand total of 110 calories each.
What you need (Makes 12 cupcakes) Not included
1 1/2 cups cupcake mix, 3 tbsp milk, 3 tbsp pumpkin puree, 3/4 cup egg whites, 2 tbsp vanilla extract, 3 tbsp cooking oil.
Instructions
1. Preheat oven to 350° and generously grease cupcake pan & set aside.
2. Beat the egg whites on high for 2 min until stiff, then add milk, vanilla extract, pumpkin & cooking oil, & beat for 15 seconds on medium/low speed. then fold in 1 1/2 cups of dry milk with a spatula until batter is smooth, but do not overmix.
3. Pour batter into metal cupcake pan with paper cup liners & bake in oven for 12 mins at 350°. A toothpick can be used to check readness if needed (bake time may vary by oven)
4. Remove from oven & let cool for 5 mins in pan, then remove cupcakes & place on cooking rock to cool completely before icing.
