Vegan "Tuna" Melt
- 1 can (15 oz. chickpeas, drained and rinsed)
- 1/2 red onion (finely chopped)
- 2 stalks of celery (finely diced)
- 1 large carrot (shredded)
- 1/4 cup vegan mayonnaise
- 1/4 cup sweet relish
- 2 Tbsp. capers (optional)
- 2 tsp. dried dill
- 2 tsp. Dijon mustard
- 2 tsp. lemon juice
- 1 garlic clove (minced)
- Vegan butter for grilling bread
- 4 slices of bread (any variety)
- Vegan cheese (sliced or shredded)
- Salt and pepper to taste
Optional toppings:
- avocado slices
- tomato slices
- lettuce
- In large mixing bowl, mash chickpeas with fork.
- Add remaining ingredients and mix well.
- Over medium heat, preheat frying pan, griddle or panini press.
- Spread vegan butter on one side of each of the 4 slices of bread.
- On dry side of 2 slices, spread chickpea mixture and top with cheese.
- Place second piece of bread on top to close sandwiches, with butter on outside.
- Place sandwiches in frying pan press and cook until browned on each side, flipping carefully halfway through.
- Remove from heat, cut sandwiches in half and enjoy.
