Quick & Creamy Coconut Curry Rice with Vegetables
- 1 cup jasmine rice (rinsed)
- 1 can (15 oz.) coconut milk
- ½ cup water
- 2 tsp. curry powder
- ½ tsp. Himalayan pink salt
- ¼ tsp. black pepper
- 2 cups organic mixed vegetables (frozen)
- Cilantro leaves
- Lime wedges
- In medium pot, combine rice, coconut milk, water, curry powder, salt and pepper. Bring to boil; cover and simmer 10 minutes.
- Stir rice, add vegetables, cover and simmer 5 minutes.
- To serve, garnish with cilantro and lime.
