Berry Baked Oatmeal With Almond Butter Drizzle

This hearty breakfast bake is an oat-standing combination of wholesome rolled oats, antioxidant-rich berries and creamy maple almond butter. Baked to golden perfection, it's a delightful mix of comforting flavors and satisfying textures – the perfect way to start your day on a berry good note.
Berry Baked Oatmeal With Almond Butter Drizzle
- 2 cups old fashioned oats
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/2 tsp. kosher salt
- 1 tsp. baking powder
- 1-3/4 cup unsweetened almond milk
- 1/3 cup maple syrup
- 1 egg
- 2 tsp. vanilla extract
- 1 cup diced strawberries
- 1/2 cup blueberries
- 1/4 cup maple almond butter
- 1 tsp. coconut oil
- Preheat oven to 350 degrees F. Spray 9x9-inch baking dish with cooking spray.
- In large bowl, stir together oats, cinnamon, nutmeg, salt and baking powder.
- In separate bowl, whisk together almond milk, maple syrup, egg and vanilla extract.
- Pour wet mixture into dry ingredients and stir until combined.
- Stir in strawberries and blueberries. Reserve a few berries for topping.
- Pour mixture into baking dish. Top with remaining berries.
- Bake 40 minutes or until top is golden and oatmeal is set. Let rest 10 minutes before serving.
- In small microwave-safe dish, combine almond butter and coconut oil and heat 30 seconds. Stir to combine; Drizzle over oatmeal before serving.
