Petite with an eye-catching bright green skin, mung beans are an exceptionally nutritious versatile legume rich in protein, potassium, magnesium, iron, & B Vitamins.
Sort & rinse. Bring 3 cups water & 1 cup beans to boil, reduce, & simmer for 45-60 minutes, or until tender. Drain & serve.
Suggested Uses:
Use in place of lentils for soups, stews, & curries.
Grind raw beans into flour & add to baked goods to boost protein & fiber.
Mash beans & use to thicken sauces & gravies.
For optimal shelf life, store in a cool, dry place.
