Directions

To Rehydrate: Cover fruit with water or juice & simmer 15 minutes, or until fruit has absorbed liquid & is plump to touch. Drain

 

Suggested Uses:

  • Mix with grains, herbs & roasted vegetables for d elicious pilaf or stuffing.

Sweet & Savory Paleo Bars

You’re a superhuman who is constantly multitasking and tackling your to-do list with passion. With your tight schedule, protein bars are often the healthy snacks to make mealtime quick and easy. Certainly, these convenient foods have come a long way over the years. Unfortunately, many are still too high in sugar and too low in healthy fats. Worse yet, they may contain inflammatory ingredients or allergens. That doesn’t sound so super, does it? So here’s your next mission, should you choose to accept it: sweet and savory paleo bars.

Using sweet dried figs, sprouted nuts and freshly cooked bacon crumbles, this recipe is a whole-food-based formula that keeps the glycemic load light, filling fat content high and your taste buds on top of the world.

Ingredients

4 pieces bacon
1 cup raw, sprouted walnuts or almonds
1 cup diced dried figs
12 dates, pitted
Ground ginger, to taste
Cinnamon, to taste
Himalayan pink salt, to taste

Directions

  1. Cook bacon, drain and save grease for cooking something else. Let bacon cool before chopping into crumbles.
  2. In a grinder or food processor, pulverize nuts until powdery.
  3. In a clean food processor, add figs and dates and process into a paste consistency, stopping to scrape the sides as needed.
  4. In a small bowl, combine nut powder and fruit paste. Use a wooden spoon to stir mixture.
  5. Add spices, tasting as you go.
  6. Add bacon crumbles and stir to combine. (Alternatively, sprinkle bacon crumbles on top after the next step.)
  7. Press mixture into shallow glass baking dish and use a spatula or spoon to evenly distribute.
  8. Cover with foil and place a heavy plate on top. Refrigerate one hour.
  9. Before cutting into squares, dab coconut oil onto a butter knife to make it easier to slice through the mixture.  

To vary the colors and flavors, adjust dried fruit options as follows:

Golden raisins = light
Apricots = medium-light
Figs = medium
Dates = medium-dark
Blueberries = dark
