Directions

What You'll Need:

- Eggs, Water, Oil, Vanilla, Apple (diced optional)

 

Muffins

Makes 12 Muffins:

Eggs Water Oil Vanilla Optional
3 1/2 cup 1/3 cup 2 tsp 1 cup diced apples

 

Heat oven to 350°F

 

Whisk eggs, water, vanilla extract and oil in a large bowl.  Add baking mix; whisk until well blended.

Note: Batter will be thick!  If using diced apples, sir into mix until evenly incorporated.

 

Spoon batter evenly into 12 lightly greased or paper-lined muffin cups.

 

Bake 15 to 20 minutes or until center of muffin bounces back when pressed.  If using paper liners, let cool completely before eating to prevent muffins from sticking to the paper.

 

Save for another day

Our mixes don't contain any preservatives, so once made, store your treats in the fridge or freezer.

 

Loaf

Makes one 8x4 inch loaf

Eggs Water Oil Vanilla Optional
3 1/2 cup 1/4 cup 2 tsp Optional: 1 cup diced apple

 

Heat oven to 325°F

 

Whisk eggs, water, vanilla extract and oil in a large bowl.  Add baking mix, whisk until well blended.

Note: Batter will be thick.  If using dice apples, stir into mix until evenly incorporated.

 

Pour batter into lightly greased 8x8-inch pan.

 

Bake 15 minutes.  Then cover loosely with foil and bake an additional 23-33 minutes or until center of loaf bounces back when pressed.  Cool 10 minutes before removing from the pan.

Gluten-Free Apple Cider Donut Muffins

This mix is amazing as is, but you won’t regret combining it with the several extra ingredients in this recipe to make these muffins reminiscent of iconic cider mill donuts. Gluten-Free Apple Cider Donut Muffins

  • 3 eggs
  • 1/3 cup coconut oil (melted)
  • ½ cup apple juice (or apple cider)
  • 2 tsp. vanilla extract
  • 1 pkg. Simple Mills Almond Flour Apple Cinnamon Muffin & Bread Mix

Topping

  • ¼ cup coconut oil (melted)
  • 2 tsp. cinnamon
  • ¼ cup coconut sugar
  1. Preheat oven to 350 degrees F. Line 12 wells of muffin pan with liners.
  2. In mixing bowl, use hand mixer to mix eggs, coconut oil, apple cider, vanilla and muffin mix until no lumps remain.
  3. Into wells of muffin pan, pour batter to 2/3 full.
  4. Bake 20-22 minutes until toothpick inserted in center of muffin comes out clean.
  5. In shallow bowl, pour melted coconut oil: on small plate, combine cinnamon and sugar.
  6. Dip tops of each baked muffin in coconut oil, then roll in cinnamon-sugar mixture to coat.
