Directions

Pancakes: (4-Inches)

How Many Mix Water
4 3/4 Cup 1/4 Cup
8 1½ Cups 1/2 Cup
12 Full Box 3/4 Cup

  • Whisk water and mix until well blended (do not over-mix. Batter should be smooth and thick and easy to spoon. Add more water as needed for desired consistency.
  • Heat lightly oiled griddle or skillet on low to medium heat. Scoop batter onto griddle using 2 Tbsp. batter for each pancake.
  • Cook until edges start to bubble, flip and cook the other side (about 2 minutes each side).

Waffles: (4 Inches)

  • Preheat waffle iron on medium heat setting.
  • Whisk water and mix until well blended (do not over-mix).
  • Pour batter onto preheated waffle iron.
  • Cook on medium according to waffle iron instructions and serve.

Gluten-Free Breakfast Casserole: Butternut Squash Strata

Each serving is a full breakfast of eggs, vegetables and gluten-free toast layered into a casserole dish with a symphony of flavors. With each bite you taste the earthiness of mushrooms, spinach and fresh herbs alongside the sweetness of butternut squash. Whether for a leisurely holiday brunch or a cozy family breakfast, it’s sure to impress. Butternut Squash & Mushroom Strata (Gluten-Free)

  • 1 small onion (halved & thinly sliced)
  • 1 8- oz. pkg. sliced mushrooms (fresh)
  • 2 Tbsp. olive oil
  • 1 cup baby spinach (fresh)
  • 2 cups roasted butternut squash or frozen cubed squash thawed
  • 1/2 loaf day-old Simple Mills Artisan Bread Mix (prepared as directed)
  • 8 eggs (whisked with salt & pepper)
  • Dried Italian seasoning or minced fresh herbs (for garnish)

Optional: 1 cup shredded mozzarella cheese

  1. Preheat oven to 375 degrees F and grease 9x13 baking dish.
  2. In medium pan over medium heat, sautee onions and mushrooms in olive oil until tender.
  3. Add spinach during last minute of cooking and season to taste with salt and pepper.
  4. Place butternut squash in prepared baking dish. In this order, top with cooked veggies, shredded mozzarella and bread cubes, pushing the cubes down into veggies.
  5. Pour whisked eggs evenly over ingredients in baking dish, moistening bread cubes in process.
  6. Top with dried Italian seasoning or fresh herbs.
  7. Bake 30 minutes or until cooked through.
  • Substitute any combination of 3-4 cups of your favorite cooked veggies or cooked turkey or chicken sausage.
