Roasted Sweet Potato Bites

everything – festive, delicious and quick to make! Perfect as a warm appetizer or a stunning side dish, they combine tangy goat cheese, sweet cranberries, nutty crunch, aromatic rosemary and a drizzle of balsamic glaze. Whether for Thanksgiving, Christmas or as part of a tapas-style dinner, their irresistible balance of sweet, tangy, nutty and spicy flavors makes them unforgettable.
Roasted Sweet Potato Bites
- 2 large sweet potatoes (or 4 medium/small)
- Organic coconut oil
- 2 tsp. pickling spice
- Sprinkle Lemon pepper
- Sprinkle Salt
- Juice of 1 lemon
- 1 cup goat cheese (or feta)
- 1 cup Pecans (or walnuts)
- 1/2 cup Dried cranberries (or sweet tart cherries)
- Fresh rosemary
- Balsamic vinegar glaze
- Preheat oven or air fryer to 380 degrees F.
- Peel sweet potatoes and cut them into 1/2-inch rounds
- Brush pieces on all surfaces with coconut oil.
- Season with lemon/pepper and pickling spice.
- Cook in air fryer or oven 15-20 minutes. (Note: Pierce with fork to make sure they are soft inside and toasted outside.)
- Arrange on serving plate. Sprinkle drops of lemon juice over each piece, and a bit of salt. Add cheese crumbles, cranberries, nuts and a few rosemary leaves. Drizzle with balsamic glaze.
- Serve warm.
