Summer Corn & Tomato Salad
When asked to bring a side to share to a summer gathering, this avocado, corn and tomato salad should be your new go-to. Dressed in a mouthwatering vinaigrette, it’s light, bright, comes together quickly and pairs well with any picnic fare. While it doesn’t need to be summer, it’s an especially perfect salad for outdoor summertime parties as it stays crisp and crunchy when green salads would wilt.
Summer Corn & Tomato Salad
Salad
- 3 cans (45 oz.) whole kernel corn ( drained)
- 1 cup grape tomatoes (sliced)
- 2 avocados (chopped)
- 1/2 red onion (chopped)
- 1/2 cup chopped fresh basil
Dressing
- 1/4 cup olive oil
- 2 Tbsp. red wine vinegar
- 1 tsp. honey
- 1/2 tsp. black pepper
- 1/2 tsp. salt
- Juice from 1/2 lime
- In large serving bowl or portable lidded container, combine all salad ingredients.
- In bowl, whisk together dressing ingredients.
- Pour dressing over salad and gently mix to coat.
Tips: For roasted flavor, sauté corn with olive oil before combining with other ingredients.
