Peach & Almond Overnight Oats

This recipe for overnight oats is bursting with flavor and perfect for busy mornings. Made with fiber-rich oats, protein-packed nuts, bright spices and sweet summer peaches, this recipe is quick to whip up and requires no baking. Simply prep the ingredients the night before and thank yourself in the morning. Feel free to customize your oats with your favorite toppings – walnuts, pecans, blueberries or shredded coconut would all be delicious additions.
Peach & Almond Overnight Oats
- 1 cup rolled oats
- 1 Tbsp. light brown sugar (packed)
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1 cup unsweetened almond milk
- 3 Tbsp. peach preserves
- 1 Tbsp. almond butter
- 1/2 tsp. vanilla bean paste
- Diced fresh peaches
- Sliced almonds
- In medium bowl, stir together oats, brown sugar, cinnamon and ginger.
- Add almond milk, peach preserves, almond butter and vanilla bean paste and combine well. Let sit 10 minutes at room temperature, then stir again.
- Pour into individual ramekins, jars or small serving bowls. Refrigerate overnight.
- To serve, top with diced fresh peaches and sliced almonds.
- Store in the refrigerator for up to 5 days.
