Apple, Leeks & Sausage Casserole
[vc_row][vc_column][vc_column_text]Combining the savory goodness of chicken sausage with the sweetness of apples and the mild flavors of leeks and green onion, this sausage casserole dish is a delightful blend of tastes and textures. Plus, it’s easy to make and perfect for feeding a hungry family. The lightness of the ingredients make it feel perfect for a springtime dinner.
Apple, Leeks & Sausage Casserole
- 2 cups leeks (finely sliced)
- 1 apple (sliced in wedges)
- 1 green onion (finely sliced)
- 1 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/8 tsp. red pepper flakes
- 1/4 tsp. cayenne pepper
- 12 oz. cooked chicken sausage (chopped into 1/4-in. slices)
- In cast iron skillet over medium-high heat, heat oil. Sauté leeks, onions and apples with salt and pepper, red pepper flakes and 1/8 teaspoon cayenne until leeks are translucent.
- Bring temperature down to medium. Add sausage to pan and warm 3-5 minutes.
- Adjust top rack in oven to 4-6 inches from top and turn oven to broil. Place skillet on top rack under broiler about 5 minutes with door ajar and brown casserole briefly to your liking.
