You Will Need
» 8 corn tortillas
» 8 ounces (about 1½ cups) shredded Monterey Jack or Cheddar Cheese
» 1 pouch Simply Organic Red Enchilada Simmer Sauce
Directions

Preheat oven to 400°. Lightly grease a 3-quart baking dish.

While oven is preheating, wrap tortillas in foil and warm in oven for 5 minutes.

To assemble enchiladas, place 2 tbsp cheese into each warm tortilla. Roll each tortilla and place seam-side down in baking dish.

Cover tortillas with simmer sauce. Sprinkle with remaining cheese.

Cover with foil and bake for 12 minutes or until heated through. Remove foil and bake 5 minutes more. Serve with your favorite toppings.

Substitute shredded cooked chicken or beef for the cheese in the filling.
