Simple Gluten-Free Tomato Focaccia
[vc_row][vc_column][vc_column_text]Take a gluten-free trip to the Mediterranean with this sunshine-infused tomato focaccia. We're talking about that iconic flatbread - all the rich olive oil, the satisfying chew, the airy crumb riddled with pockets for toppings. Keeping it simple and breezy, you’ll make the dimpled dough using Simple Mills Almond Flour Artisan Bread Mix then layer on flavor with tomatoes, red onion, oregano and plenty of bold olive oil. Buon appetito!
Simple Gluten-Free Tomato Focaccia
- 1 pkg. Simple Mills Gluten-Free Almond Flour Artisan Bread Mix
- 2 Tbsp. water
- 2 eggs
- 2 Tbsp. apple cider vinegar
- 4 Tbsp. olive oil (plus more for drizzling)
- 1/2 pint cherry tomatoes (halved)
- 1/2 red onion (thinly sliced)
- Salt (to taste)
- Pepper (to taste)
- 1 tsp. oregano
Optional
- Thyme leaves (for garnish)
- Preheat oven to 350 degrees F. Grease baking sheet with olive oil.
- In large mixing bowl, whisk together eggs, water and olive oil.
- Add baking mix and combine well.
- Stir in apple cider vinegar until well incorporated and let dough sit to thicken for 4 minutes.
- On work surface, using hands coated with olive oil, roll dough into one large ball. Using hands, flatten out on prepared baking sheet.
- Onto dough, arrange cherry tomatoes and onion slices and press slightly into dough. Season focaccia with oregano, salt, pepper and a drizzle of olive oil.
- Bake 18-20 minute, turning oven to broil for final minute.
