When we came to the United States, we enjoyed meeting up with friends at great Mexican restaurants, but we were disappointed with the options available for creating truly delicious Mexican meals at home. Together, we combined our Mexican heritage and our years of experience in the food community to create ready-to-eat foods that honor Mexico’s rich culinary traditions.

Bacon Fried Rice With Hatch Chiles

  • 1 large hatch green chile (minced)
  • 3 slices bacon (cooked)
  • 3 eggs (beaten)
  • 3 cloves garlic (minced)
  • 1 Tbsp. ginger (minced)
  • 1 avocado (sliced)
  • 3 green onions (white tips and greens sliced)
  • 2 cups white rice (cooked)
  • 1 tsp. sesame oil
  • 1 Tbsp. soy sauce
  • 1/2 tsp. salt
  • 1/2 tsp. msg (optional)
  • 1/2 tsp. pepper
  1. Heat wok or large skillet on high heat with oil.
  2. Add hatch chile and cook for 2 minutes. Add ginger, garlic and whites of green onion. Sauté for 1 minute.
  3. Add rice, salt, soy sauce, msg, sesame oil and pepper. Mix until well incorporated.
  4. Add eggs and mix into the rice and cook for 2 minutes. Add cooked bacon.
  5. Garnish with sliced avocado and green onions.
