Spectrum Coconut Oil Spray with Spectrum® brand refined coconut oil is the perfect start for your favorite dishes. With the scent of freshly cracked coconuts and a clean natural flavor, this versatile non-stick spray oil can be used for anything from coconut shrimp to a pineapple upside down cake.
Directions
Shake well before using. Hold can 6 to 12 inches from unheated cooking surface and spray until coated. Do not refrigerate.
Coconut Oil naturally solidifies in colder temperatures, and is best stored at room temperature. If nozzle should become clogged, run under warm water to clear nozzle.

Oven Baked Maple-Dijon Chicken Tenders
[vc_row][vc_column][vc_column_text]Crispy, juicy and full of flavor, these oven baked maple-Dijon chicken tenders strike the perfect balance between sweet and savory. Coated in a golden almond flour and cornflake crust, each tender bakes up perfectly crunchy without the need for frying. Dip them in a creamy maple mustard sauce for a protein-packed meal that feels indulgent but stays healthy.
Oven Baked Maple-Dijon Chicken Tenders
- 1 lb. chicken breast tenders
- 1 cup almond flour
- 1 cup cornflakes
- 1 tsp. garlic powder
- 1 tsp. smoked paprika
- 1/4 tsp. black pepper
- 1 egg
- 2 Tbsp. Dijon mustard
- 1 Tbsp. maple syrup
- 1 Tbsp. olive oil
- cooking spray
- 1 tsp. salt
- 1 Tbsp. water
Dipping sauce
- 3 Tbsp. Dijon mustard
- 2 Tbsp. maple syrup
- 2 Tbsp. plain Greek yogurt
- Pinch of salt
- Preheat oven to 450 degrees F and brush sheet pan with olive oil.
- In small blender or food processor, blend cornflakes until fine powder forms.
- In shallow bowl, stir together almond flour, blended cornflakes, garlic powder, smoked paprika and salt.
- In another shallow bowl, whisk together egg, Dijon mustard, maple syrup and water until smooth.
- Dip each chicken tender into egg mixture, allowing excess to drip off. Coat in almond flour mixture, pressing lightly so coating sticks.
- Place coated tenders on prepared baking sheet. Spray top of tenders generously with cooking spray. Bake for 10 minutes, gently flip tenders and bake for 10
- more minutes or until chicken reaches internal temperature of 165 degrees F and coating is golden brown.
- While tenders bake, in small bowl, whisk together Dijon mustard, maple syrup, Greek yogurt and salt until smooth.
- Serve chicken tenders hot with maple mustard dipping sauce on side.
