Vegan "Lobster" Roll

  • 14 oz. hearts of palm (salad cut)
  • 1/4 cup plant-based mayonnaise
  • 1/4 cup celery (minced)
  • 1 Tbsp. chives (minced)
  • 1 tsp. flat-leaf parsley (minced)
  • 1-3/4 tsp. lemon juice
  • 1/4 tsp. lemon zest
  • 1/4 tsp. Himalayan pink salt
  • 1/8 tsp. ground black pepper
  • 2 brioche or hot dog buns
  • 1 Tbsp. plant-based butter (melted)
  1. In medium bowl, combine all ingredients (except buns and butter) and mix until combined.
  2. In medium skillet on medium heat, add butter and toast buns until golden. Remove from skillet.
  3. Fill each bun with “lobster” meat and garnish with extra chives or parsley.
