Pumpkin Seed Pudding with Chia

You can certainly enjoy them straight out of a bag, but another good way to get them to the table is with products made from pumpkin seeds, like pumpkin seed butter and protein powder. This pudding recipe combines both favorites to create a delicious treat, perfect for all your vegan snacking needs.
Ingredients
2 scoops pumpkin seed protein powder
1/2 cup unsweetened vanilla coconut milk
1/4 cup pumpkin seed butter
1/4 cup mashed sweet potato
2 Tbsp. chia seeds
2-3 tsp. cinnamon
Directions
- In a high-speed blender, combine all ingredients and process until smooth.
- Transfer to a jar with an airtight lid and refrigerate for about 2 hours until a gelled, pudding-like consistency is reached.
