Dark Chocolate Chunk & Raspberry Muffins (Gluten-Free)
Studded with juicy raspberries and dark chocolate chunks, these heavenly muffins look as wonderful as they taste. Made with better-for-you, gluten-free ingredients and no refined sugar, they’re perfect at breakfast, brunch or as a sweet snack with coffee.
Dark Chocolate Chunk & Raspberry Muffins (Gluten-Free)
- 3 organic eggs
- 2 Tbsp. coconut oil
- 1/3 cup water
- 1-1/2 Tbsp. vanilla extract
- 3 Tbsp. vegan butter
- 3/4 cup almond flour
- 3/4 cup arrowroot powder
- 1/4 cup coconut flour
- 1/2 cup coconut sugar
- 1 tsp. baking soda
- Dash sea salt
- 1/2 cup Hu Chocolate Gems
- 1 cup organic raspberries
- Preheat oven to 325 degrees F.
- In large mixing bowl, whisk together eggs, oil, butter, water and vanilla.
- Add remainder of ingredients except chocolate and raspberries and whisk until well blended.
- Stir in most of chocolate and raspberries, reserving some for top of muffins.
- Into greased or paper cup-lined muffin pan, spoon batter into 12 wells. Sprinkle on remainder of chocolate chunks and raspberries.
- Bake 20 minutes or until toothpick inserted in center comes out clean.
