Made with quinoa, oat milk and apple, it’s loaded with protein, fiber and enough nutrients to fuel you till lunch. Plus, the cinnamon and maple add a sweet, comforting flavor. For additional goodness, top it with slices of fresh apple or roasted pumpkin seeds!
Maple Quinoa Breakfast Bowl
- 1 cup quinoa (rinsed)
- 2 cups oat milk
- 1 apple (grated)
- ¼ tsp. cardamom (ground)
- 1 tsp. Ceylon cinnamon (ground)
- ½ tsp. maple extract
- 2 Tbsp. maple syrup
- Pinch salt
Suggested toppings
- Drizzle maple syrup
- 1 apple (cut into slices)
- ¼ cup maple pumpkin seeds
- In saucepan over medium heat, stir together all ingredients. Bring to gentle boil.
- Lower heat to simmer; cover. Cook 20 to 25 minutes. Turn heat off; let rest 10 minutes.
- Stir mixture. Serve warm with additional toppings and extra drizzle of maple syrup, if desired.
Leftovers store well for several days in the refrigerator and can be quickly reheated or served at room temperature.
