With dishes like, “soup surprise” and “mystery meat patties,” it’s no wonder you’ve tried to forget most of the cafeteria food you grew up eating – with the exception of tater tots, that is. Though you eventually graduated to better diner-made or frozen versions of tots, those deep-fried rounds don’t quite fit in with the healthy lifestyle you’re trying to maintain these days. The solution? This elegant and spicy sweet potato tots recipe. The only “surprise” here is that these tasty snacks are actually good for you!
Ingredients
4 orange sweet potatoes, cubed into tot shape
2 Tbsp. dried rosemary
2 tsp. ground cumin
2 tsp. chili powder, or more to taste
1/3 cup avocado oil
Pinch sea salt
Directions
- Preheat oven to 350 degrees F. (Set to 375 degrees for extra crispy tots.) Line a baking sheet with parchment paper or lightly oil.
- In medium-sized bowl, combine spices and avocado oil. Add cubed sweet potato and evenly coat with mixture.
- Transfer to prepared baking sheet and bake for 20 minutes or until desired crispiness is reached.
- If desired, serve with healthy, homemade ketchup.
Note: Want to add more color to your plate? Make half of these tots with purple sweet potatoes.
