Directions

Summer Peach Cobbler Protein Pancakes
Cobbler is king of summer desserts—fresh berries, crumbly crust and, if you’re lucky, a dollop of ice cream on top. While it’s a great way to put the season’s sweetest harvests to good use, this after-dinner treat is usually just that: a treat. Spoonfuls of sugar and boatloads of butter make cobblers an indulgence with just a hint of healthy from fruit. But it doesn’t have to be that way. With a few creative ingredient swaps, and a twist on the time of day it’s served, you can cave to cobbler – and consider it nutritious – first thing in the morning! Try this peachy pancake recipe and see for yourself.
Summer Peach Cobbler Protein Pancakes
Makes 8-10 pancakes
Ingredients
Protein pancakes
1 scoop vanilla protein powder
1 cup oat flour (or ground oats)
1 cup unsweetened vanilla almond milk
1 packet stevia
½ tsp. cinnamon
¼ tsp. nutmeg
1 tsp. baking powder
½ tsp. vanilla extract
2 egg whites
¼ tsp. butter extract
Peach topping
½ tsp. coconut oil
½ Tbsp. honey
2 small peaches, chopped
Optional: granola for garnish
Directions
- In large mixing bowl, combine all pancake ingredients and mix well.
- Spray griddle or frying pan with non-stick spray; heat to medium heat.
- Pour ½ cup batter per pancake onto griddle/frying pan and cook until bubbles form; flip over pancakes and continue cooking until done.
- For topping, in medium-sized saucepan, combine all topping ingredients (except granola) and heat over medium heat until warmed.
- Serve pancakes with warmed peach topping, granola and maple syrup, if desired.
