Directions

Stove-Top Cooking Instruction: Put one package of pasta into 4 quarts (3.78 liters) of boiling water and add a tablespoon of salt (do not add salt if on a sodium-free diet). Stir occasionally and cook for 11-13 minutes until desired tenderness is reached. Rinse with cold water. Drain well. If stir-fry, rid surface moisture and let rest for 5-10 minutes for best results. Can be served hot or warm with any kind of pasta sauce or in your favorite pasta recipes, in hot soup, in salad, stir-fried, or as a casserole. Use it as you would any regular pasta.

Quick & Energy-Saving Cooking: Cook 1 to 2 minutes in boiling water. Switch off stove. Cover pot for about 20 minutes.

Pasta Salad with Artichokes & Olives

Ingredients

8 oz. gluten-free penne pasta
1 cup artichoke hearts in olive oil
½ cup pitted Kalamata olives
2 cups heirloom tomatoes, chopped
2 cups cucumber, peeled and chopped
¼ cup freshly squeezed lemon juice
¼ tsp. sea salt
¼ tsp. black pepper

Directions

  1. Cook pasta according to package directions. Drain, rinse and set aside.
  2. In a large bowl, toss pasta with remaining ingredients.
  3. Chill pasta salad in the refrigerator for about an hour before serving.
