Baked Nectarines with Oatmeal Cookie Crumble

Baked Nectarines with Oatmeal Cookie Crumble
Crumble
Dry ingredients
- 1 cup rolled oats
- 2 Tbsp. brown rice flour
- 1/3 cup chopped almonds (or nuts of choice)
- 1/4 cup desiccated coconut
Wet ingredients
- 2 Tbsp. maple syrup
- 3 Tbsp. avocado oil
Baked nectarines
- 4 large nectarines
- 2 Tbsp. maple syrup
- 1 Tbsp. refined coconut oil
- 2 Tbsp. lemon juice
- 1 tsp. vanilla extract
- 1/2 tsp. cinnamon powder
Other
- Vanilla non-dairy ice cream
- Preheat oven to 300 degrees F. Line sheet pan with parchment paper.
- In bowl, mix together oatmeal cookie crumble wet ingredients maple syrup and oil. Add dry ingredients and stir until fully incorporated.
- Spread mixture onto prepared pan and flatten with spatula. Bake 40 minutes or until lightly browned. Let cool completely.
- For nectarines, preheat oven to 400 degrees F.
- Cut nectarines in half vertically and remove pits. On baking dish, place nectarine halves cut side up.
- In small bowl, mix together all remaining nectarine ingredients. Pour mixture over nectarines and bake about 30 minutes, or until very soft. (Note: The length of time will depend on the nectarines ripeness.)
- To serve, spoon cookie crumble onto plate, top with nectarines, vanilla ice cream and then more crumble on top. Serve warm or cold.
