Chocolate-Peanut Butter Cup Protein Cookies

Ingredients
1 Quest Cookie Dough Protein Bar
4 Quest Cravings Peanut Butter Cups
Chocolate Frosting
1 Tbsp. Swerve Confectioner’s Style Erythritol
1 Tbsp. Sweet Spreads Chocolate Brownie Coconutter
1 Tbsp. Walden Farms Chocolate Syrup
Directions
- Preheat oven to 325 degrees F. Line a cookie sheet with a Silpat or parchment paper.
- Break protein bar into 4 equal parts. On a microwave-safe plate, heat the pieces for 12-15 seconds until slightly soft.
- Place each piece onto the prepared cookie sheet and flatten into a round, thin circle. Place a peanut butter cup on top of each circle and cup the protein bar around the peanut butter cup.
- Bake for 4 minutes. Let cool in fridge while preparing the frosting.
- In a microwave-safe bowl, microwave coconutter for 10 second to liquefy. Add syrup and erythritol to bowl and mix until fully combined.
- Frost each chilled cookie with a fourth of the frosting.
