Halloween Monster Bundt Cake

The rich chocolate base stays moist thanks to a mix of butter, olive oil and Greek yogurt, while a thick layer of green frosting brings the monster magic to life. Topped with candy eyeballs and colorful sprinkles, this cake is sure to be the star of your sweet spread—playful, easy to make and monstrously delicious!
Monster Bundt Cake
- 3/4 cup butter (softened)
- 1/4 cup olive oil
- 1/2 cup brown sugar
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 cup plain Greek yogurt
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup cocoa powder
- 2 cups flour
Frosting
- 4 Tbsp. butter (softened)
- 2 cups powdered sugar
- 1/4 cup heavy cream
- 1 tsp. green gel food coloring
Toppings
- Preheat oven to 350 degrees F
- Combine softened butter with sugars and mix well.
- Mix in eggs and vanilla. Next, mix in yogurt until combined well.
- Stir in baking soda, salt, cocoa powder and flour.
- Pour mixture into prepared bundt cake pan.
- Bake for 25-30 minutes.
- Combine all frosting ingredients. Frost into cake once cooled.
- Top with sprinkles and candy eyeballs.
