Gluten-Free Coffee Cake with Plum Streusel
[vc_row][vc_column][vc_column_text]Tender oat-based crumb, juicy plums and a crackly streusel topping come together in this gluten-free coffee cake that’s made for slow mornings, brunch tables and a second cup of coffee.

Gluten-Free Coffee Cake with Plum Streusel
Cake
- 1-1/2 cups gluten-free oat flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup coconut cream
- 1/2 cup organic sugar
- 1/4 cup coconut oil
- 1 Tbsp. psyllium husks
- 2 Tbsp. water
Oat topping
- 1 cup gluten-free rolled oats
- 2 Tbsp. coconut oil
- 1 Tbsp. organic sugar
- 1/2 tsp. vanilla
Topping
- Preheat oven to 350 degrees F. In medium bowl, mix together dry ingredients.
- Stir wet ingredients into dry until well combined.
- Pour into 9x13-inch baking pan.
- In small bowl, mix together oats, coconut oil, sugar and vanilla extract.
- Spread oat topping evenly over cake and top with sliced plums.
- Bake 40 minutes until toothpick comes out clean.
- Slice and serve warm. Store leftovers covered in fridge.
