Goat Cheese & Brown Sugar-Cinnamon Apple Empanadas

Goat Cheese & Brown Sugar-Cinnamon Apple Empanadas
- 2 cups canola oil (for frying)
- 10-12 discs empanada dough (homemade or store bought)
- 6 oz. goat cheese (crumbled)
- 3 gala apples (or apples of choice, peeled, cut into 1/4 –inch cubes)
- 1/2 stick salted butter
- 2 Tbsp. brown sugar (plus more for sprinkling)
- 1 tsp. cinnamon (plus more for sprinkling)
- In small, deep pot, heat 2 cups oil to 375 degrees F.
- In sauté pan over medium heat, heat butter. Once melted, stir in brown sugar to combine. Add apples and cinnamon. Sauté 3-4 minutes until softened. Remove pan from heat.
- To empanada disc, add about 2 tablespoons apple filling and some goat cheese crumbles. Fold in half and crimp edges to seal dough.
- To fry pot with hot oil, carefully add small batches of empanadas (2-3 at a time) and fry about 60-90 seconds until golden brown. Repeat for all.
- If desired, sprinkle cinnamon and sugar over finished empanadas.
