Tuna Salad-Stuffed Avocado
Salad
- 2 pouches albacore wild tuna (3 oz. each)
- 2 avocados (halved and seeded)
- ¼ cup diced red bell pepper
Dressing
- 2 Tbsp. lemon juice
- 1 Tbsp. olive oil
- 1 tsp. red wine vinegar
- ¼ tsp. dried dill
- ? tsp. salt
- Dash black pepper
- 2 Tbsp. fresh cilantro (minced)
- In medium bowl, combine dressing ingredients.
- Add in tuna and red bell pepper. Mix until well coated and combined.
- Drop ¼ cup tuna salad on top of each avocado half.
- Serve immediately.
