Fermented Cacao Nibs

Our Nibs are made from cacao pods that are fermented in banana leaves in the shade for 3-5 days. Shelled and husked, the nibs are never roasted or see any additional heat. Many people looking for the antioxidants, particularly flavonoids and polypheols, in dark chocolate often purchase cacao nibs because they are minimally processed and contain no added sugars. Our Cacao Nibs have a chocolatey flavor but they're not as sweet as mass produced chocolate. Enjoy them in smoothies, ice cream, cookies, granola and trail mix.

If you’re into freshly baked treats (and your entire house smelling like a bakery), you’re going to want to try this recipe. For a sweeter batch, add a drop more maple syrup. Not sure how much? Vegan Chocolate Plantain Brownie Muffins

  • 3-4 very ripe plantains, (almost black)
  • 1 cup oat flour
  • 8 pitted medjool dates
  • 1/2 cup water
  • 1/2 cup Wildly Organic Cacao Powder
  • 1-1/2 tsp. baking powder
  • 1 tsp. pure maple syrup (or more for a sweeter batch)
  • 1/2 tsp. cinnamon
  • Coconut oil, (to coat pan)
  • Hemp seeds, (optional)
  • Wildly Organic Cacao Nibs, (optional)
  1. Preheat oven to 350 degrees F. Lightly coat muffin tin wells with coconut oil.
  2. In bowl, use fork to mash plantains until mostly smooth (a few lumps are OK). Set aside.
  3. In blender, combine dates and water until syrupy. Pour into mashed bananas. Add oat flour, cacao powder, baking powder, maple syrup and cinnamon. Mix until fully incorporate. If mixture appears stiff or doughy, slowly stir in more water until it reaches batter-like consistency.
  4. Spoon batter into muffin tin wells a little over halfway. Optional: sprinkle hemp seeds and/or cacao nibs on top of each muffin.
  5. Bake for 25 minutes. Cool in pan for a few minutes and then transfer muffins to wire rack or plate until just warm or to cool completely.
