Skillet Pork Chops With Apples & Onion
This warm and comforting meal comes together in one skillet in 30 minutes. You simply can not beat that. Sweet apples cook down with red onion to create a sweet and savory earthy smother for the seared pork. With fresh rosemary and thyme and a dollop of whole-grain mustard in the mix, plates
will be licked clean.
Skillet Pork Chops With Apples & Onion
- 2 Tbsp. avocado oil
- 3 4 oz. pork chops
- ¾ cups chicken bone broth
- 1 tsp. whole grain mustard
- 2-3 sprigs rosemary (chopped, plus more for garnish)
- 1/2 tsp. fresh thyme leaves
- 1/2 tsp. kosher salt (or more to taste)
- 1/4 tsp. black pepper (or more to taste)
- 2 medium-sized red apples (thinly sliced)
- 1 red onion (thinly sliced)
- Season both sides of pork chops with kosher salt and black pepper, to taste.
- In cast iron skillet over medium-high heat, heat one tablespoon oil. Add pork chops, leaving about one inch between chops to ensure even cooking. Sear about 4 minutes each side. Remove pork chops from pan onto paper towels.
- In pan over medium-high heat, heat one tablespoon oil and add apple, onion, rosemary, thyme, salt and pepper. Cook about 4 minutes, stirring occasionally.
- In bowl, whisk together bone broth and mustard; add to pan. (Note: At this point, apples and onion should begin to get tender.)
- In pan, make space between apples and onion to add pork chops. Cook about 3 minutes to ensure internal temperature of pork chops reaches at least 145 degrees F.
To serve, garnish with additional rosemary.
