Opt for a vegan chickpea tuna salad with this simple, protein packed recipe, complete with all the flavors and textures you’re accustomed to in the traditional deli dish. Celery, dill relish and diced onion add crunch and flavor, plus enjoy a creamy concoction of vegan mayonnaise and Dijon mustard for a tangy, sharp flavor. Serve in a sandwich, as lettuce wraps, in a bowl or on a salad. It’s a versatile dish that only gets better when it chills.
Chickpea 'Tuna' Salad (Vegan)
- 1 15- oz. can chickpeas (drained & rinsed)
- 1/4 cup tomatoes (diced)
- 2 stalks celery (diced)
- 1/3 cup dill pickle relish
- 2 cloves garlic (minced)
- 2 Tbsp. diced red onion
- 1/4 cup vegan mayonnaise
- 1 Tbsp. Dijon mustard
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 pinch cayenne pepper
- In large bowl, use potato masher or fork to smash chickpeas into a chunky texture.
- Add remaining ingredients and mix until all is combined.
- Serve as lettuce wraps, in a sandwich or on its own.
