Savory Pumpkin Flatbread Pizza

  • 4 flatbreads
  • 2 cups broccoli (chopped)
  • 1/2 red onion (sliced)
  • 1/3 cup sun-dried tomatoes
  • 1 cup mozzarella cheese
  • 2 Tbsp. olive oil

Pumpkin sauce

  • 2/3 cup pure pumpkin puree
  • 3 Tbsp. ricotta cheese
  • 1 tsp. minced garlic
  1. Preheat oven to 375 degrees F. Arrange flatbreads on baking sheet.
  2. In bowl, combine pumpkin sauce ingredients. Spread onto each flatbread.
  3. Top flatbreads with cheese, broccoli, red onion and sun-dried tomatoes.
  4. Bake for 20 minutes and drizzle with olive oil.
  • For an extra crunch, top with roasted chickpeas before baking.
