Skillet Tamale Pie with Cornbread Topping

This creative skillet casserole features a hearty Tex-Mex filling (with meat, beans, tomato and corn!) and a soft cornbread topping that melts in your mouth. Need a veg version? Skillet Tamale Pie with Cornbread Topping

Tamale Pie

  • 1 lb. ground beef
  • 1 tsp. salt
  • ¼ tsp. black pepper
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1 cup corn kernels
  • 1 cup black beans
  • 1 cup diced tomatoes (canned or fresh)

Topping:

  • 2 cups masa harina
  • ½ tsp. salt
  • 1 cup oat milk
  • 1 cup water
  • 1 Tbsp. egg replacer + 2 Tbsp. water
  1. Preheat oven to 400 degrees F
  2. In a medium pot, cook ground beef on medium-high heat until cooked through.
  3. Drain any excess fat by pushing meat to one side of pot, absorbing oil with paper towels. (Note: Take caution working with hot oil.)
  4. Stir in spices, corn, beans and tomatoes.
  5. Pour meat and veggies into a cast iron skillet or 9-inch baking pan.
  6. In medium mixing bowl, stir together masa, salt, water, milk and egg.
  7. Evenly spread masa over meat and veggie mixture.
  8. Bake 20-25 minutes until brown on top.
