Shrimp Pineapple Skewers

And this recipe for sweet and savory shrimp pineapple skewers is the perfect three-ingredient dinner for a laid-back night. It’s low lift but full of flavor. Serve your skewers over rice, noodles or wrapped in a fluffy flatbread.
- 1 lb. large shrimp (peeled and deveined)
- 2 cups fresh pineapple chunks
- 1/2 cup barbecue sauce
- Fresh lime and cilantro (for serving (optional))
- Preheat grill to medium heat.
- Thread shrimp and pineapple onto soaked wooden or metal skewers. Brush on both sides with barbecue sauce.
- Place skewers on grill over indirect heat and cook for 2 to 3 minutes per side, until shrimp are pink and just cooked through. Brush with additional barbecue sauce before flipping.
- Serve immediately with lime juice and cilantro for garnish.
