Apple Butter Cake

Apple Butter Cake
Dry
- 1-1/2 cups all-purpose flour
- 1/3 cup super-fine almond flour
- 1/4 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. ground nutmeg
- 1 tsp. ground cinnamon
- 1/4 tsp. cardamom
- 1 tsp. Himalayan pink salt
Wet
- 1/3 cup light brown sugar
- 1 stick butter (room temperature)
- 1 cup buttermilk (milk or plant-based milk)
- 1/4 cup avocado oil
- 1 tsp. vanilla extract
- 2 eggs room temperature
Swirls
- 1/2 cup apple butter spread
- 1 apple (thinly sliced)
Optional: Sliced almonds
- Preheat oven to 375 degrees F and prepare two 8x4 loaf pans and line with parchment paper.
- In mixer, add wet ingredients, including butter, sugar and avocado oil. Cream until smooth.
- Add eggs, milk of choice and vanilla. Combine until light and fluffy.
- In medium bowl, sift dry ingredients.
- Pour dry ingredients into wet and gradually mix until well combined into a smooth batter.
- Pour batter into two prepared loaf pans. Dollop apple butter spread and gently swirl with a toothpick or knife. Top loaf cake with thinly sliced apples and optional sliced almonds.
- Bake 45-50 minutes, until center is set. Test with a toothpick. Cool 20 min before slicing.
- To make homemade apple butter, peel and dice 3-5 apples and cook until tender with ? cup brown sugar, 1 tsp. ghee, 1 wedge of lime, 2 tsp of spices & 1 tsp. of vanilla. Blend until smooth.
